Our founder, Zoltan, built the collection around Bikavér, Hungary’s signature red wine, then broadened it with varietal wines that reveal the character of individual grapes and regions. The result ranges from vibrant, fruit-forward reds for everyday enjoyment to concentrated, vineyard-selected wines with considerable ageing potential.

These wines form part of our wider Hungarian wine collection, personally curated through regular tastings, winery visits and long-standing relationships with producers across the country.

Bikavér – The Heart of Hungarian Red Wine

Bikavér, traditionally known in Britain as Bull’s Blood Wine, sits at the heart of our red wine range. This regulated red blend can be produced only in Eger and Szekszárd, with Kékfrankos providing its recognisably Hungarian core.

In the cooler northern region of Eger, Bikavér typically displays lively acidity, savoury complexity, dark and sour-cherry fruit and pronounced mineral tension. The warmer climate and loess soils of southern Szekszárd tend to produce a rounder, more generous interpretation with ripe berries, velvety tannins and sweet barrel spice.

Our dedicated Bikavér and Bull’s Blood Wine collection brings together every recognised quality level from both regions, from approachable Classicus wines to Superior, Grand Superior and Premium expressions of individual vineyards.

This allows wine drinkers to explore not only the differences between Eger and Szekszárd, but also the remarkable progression from easy-drinking Bull’s Blood to complex, age-worthy Hungarian fine wine.

Kékfrankos – The Backbone of Hungary’s Great Reds

Kékfrankos, also known internationally as Blaufränkisch, is one of the defining grapes of Hungarian red wine. It is valued for its vibrant acidity, peppery spice and combination of red and dark fruit, as well as its ability to express regional soils and retain freshness in warmer vintages.

The variety forms the essential backbone of Bikavér, but it is equally compelling as a single-variety wine. Depending on its origin and winemaking, Kékfrankos can range from bright, juicy and lightly spicy to structured, mineral and capable of extended ageing.

The Bolyki Kékfrankos is a particularly powerful expression from Eger. Made from vineyard-selected grapes and matured in oak, it combines blackcurrant and dark berry fruit with floral aromas, savoury spice, energetic acidity and a firm tannic structure.

It reflects János Bolyki’s modern approach to winemaking: expressive and approachable, but firmly rooted in the character of Eger and its vineyards.

Kadarka – Fragrant, Spicy and Unmistakably Hungarian

Kadarka offers a lighter and more fragrant side of Hungarian red wine. This historic grape is particularly associated with Szekszárd and is treasured for its red-berry fruit, lively acidity, delicate structure and distinctive notes of pepper and paprika.

At first glance, Kadarka can recall a fine Pinot Noir, with its translucent ruby colour, delicate body and bright red-berry elegance. Its more aromatic examples can also show white pepper, rose petal, and sour-cherry complexity that may remind adventurous wine drinkers of the fragrant qualities found in Italian Nebbiolo.

The Lajver Szekszárdi Kadarka is made in small batches from carefully selected grapes grown on the region’s loess soils. Light-bodied and refreshing, it offers flavours of cherry and redcurrant accompanied by fresh red berries, spice and a characteristic hint of paprika.

Kadarka is also a key component of many Szekszárd Bikavér blends, adding fragrance, freshness, and spice alongside the more structured Kékfrankos.

Merlot and International Grapes in Hungary

Hungary’s traditional varieties are complemented by international grapes that have found an exciting new home in the country’s varied climates and soils.

Merlot performs particularly well in the warmer regions of Szekszárd and Villány, where long summers allow it to ripen fully while local limestone and loess soils help preserve balance. Hungarian Merlot can offer ripe plum, blackberry and sour-cherry flavours, with smooth tannins and sweet spice developed through ageing in Hungarian oak.

Cabernet Sauvignon, Pinot Noir and Syrah also appear both as varietal wines and as components of carefully constructed red blends. These grapes do not simply imitate Bordeaux or other established regions. In Hungary they acquire an individual character shaped by continental weather, distinctive soils, local oak and the winemaker’s interpretation of each vintage.

Villányi Franc – Hungary’s Cabernet Franc Superstar

Cabernet Franc has achieved an especially important status in Villány, Hungary’s southernmost wine region. In Bordeaux it is traditionally used as a blending partner, but Villány’s winemakers recognised its potential to produce exceptional single-variety red wine.

Villány has a warm, sub-Mediterranean climate with long summers and vineyards planted predominantly on loess over limestone. These conditions allow Cabernet Franc to reach full ripeness, producing rich, full-bodied wines with concentrated dark fruit, velvety tannins, savoury spice and sufficient acidity to remain balanced and age gracefully.

Following a visit to the region in 2000, renowned British wine authority and Master of Wine Michael Broadbent concluded that “Cabernet Franc has found its natural home in Villány.” His assessment captured what local winemakers had already begun to recognise: here, Cabernet Franc could become the principal attraction rather than a supporting grape.

The region subsequently developed Villányi Franc as a protected collective identity for its finest Cabernet Franc wines. At the highest super-premium level, the wine must be made entirely from Cabernet Franc, with exceptionally restricted vineyard yields and extended maturation in both oak and bottle.

These demanding standards position Villányi Franc among Hungary’s most ambitious dry red wines. The finest examples combine power and ripeness with precision, freshness and a clearly defined regional character.

Labrador Merlot – Created Through a Shared Love of Dogs

Our Lajver Merlot “Labrador” tells a particularly personal story. Its distinctive label was inspired by the Lajver estate manager’s own Labrador and developed through our shared love of dogs.

Although the design makes it an appealing gift for Labrador owners and wine lovers, we selected the wine inside for quality rather than novelty. The grapes are hand-harvested from vineyards surrounding Lajver Creek and matured for 12 months in Hungarian oak.

The result is a smooth, velvety Hungarian Merlot with forest-fruit aromas and flavours of plum, blackberry and sour cherry. Refined acidity and rounded tannins make it approachable on its own and versatile enough to pair with roast poultry, pork, mushroom dishes, and gently spiced food.

Hungarian Rosé Wine

This collection also includes our carefully selected Hungarian rosé wines.

Hungarian rosé can range from pale, delicate, Provençal-style wines to deeper-coloured, more structured wines with greater extraction and gastronomic character.

The Bolyki Egri Rosé, made from Kékfrankos, represents the more serious and deeply coloured end of the spectrum. It is fully dry, with vibrant acidity, juicy red and black fruit, and enough depth to pair with seafood, light pasta, pizza, and cheese.

Our range also includes elegant salmon-pink rosé, distinctive wines made from unusual grape combinations and naturally sparkling pét-nat rosé. Together, they show that Hungarian rosé isn't limited to simple summer drinking: it can also offer texture, structure, and genuine versatility at the table.

Siller – Hungary’s Traditional “Fifth Colour” of Wine

Siller, pronounced “shiller”, occupies a fascinating position between rosé and light red wine. It is produced from black grapes whose juice remains in contact with the skins for longer than a typical rosé but for less time than a conventional red wine.

Maceration varies by producer, but traditionally lasts about 24–48 hours. This additional skin contact gives Siller its deeper ruby colour, greater fruit extraction and gentle tannic structure while preserving the freshness and easy-drinking character associated with rosé.

Historically, this balance made Siller a natural everyday table wine. It has enough flavour and structure to stand alongside hearty food, without the heavier or more drying tannins of a full-bodied red.

Siller is particularly well suited to paprika-rich Hungarian cooking. It is equally at home with goulash, chicken paprikash, sausages, tomato-based pasta and pizza. Served lightly chilled, Siller is one of the most versatile and characteristically Central European food wines in the collection.

Hungarian Red Wine and Food

Hungarian red wines pair naturally with food. Bikavér is a classic partner for beef goulash, slow-cooked stews, roast lamb, game and grilled meats, while the fresh acidity of Kékfrankos works particularly well with steak, barbecue dishes and food seasoned with Hungarian paprika.

Lighter Kadarka complements roast poultry, charcuterie, tomato-based dishes and paprika-spiced vegetables. Richer Merlot-, Villányi Franc-, and Cabernet-based wines pair beautifully with roast beef, lamb, venison, mushrooms, and mature cheese.

Serve lighter reds and Kadarka at approximately 14–16°C. Fuller-bodied Bikavér, Merlot and Cabernet-based wines are generally best at 16–18°C, with more structured or mature bottles benefiting from decanting before serving. Rosé and Siller are best enjoyed lightly chilled.
