What is a truffle?

Black truffles, scientifically known as Tuber melanosporum, are rare underground fungi that grow in symbiotic relationships with the roots of oak, hazel, and other trees in specific climates. Often called the "black diamonds" of the culinary world, these aromatic treasures are traditionally associated with France's Périgord region, as well as Italy and Spain.

Although it is a little-known fact, they are also native to Hungary, and a significant portion of the black truffles available in the UK comes from this geographically small but gastronomically mighty country.

Unlike mushrooms that grow above ground, truffles develop entirely underground. They must be carefully located using trained dogs or pigs that can detect their distinctive, intoxicating aroma through soil and leaf litter. The black truffles used in crafting our truffle food are foraged by abandoned dogs trained by a dog charity for this unique task.
