What Is Foie Gras?

Foie gras, literally meaning “fat liver” in French, is a gourmet food made from the enlarged liver of specially raised ducks or geese. Although strongly associated with French cuisine, foie gras also has a long tradition in Hungary, where goose and duck farming has played an important role in the country’s culinary heritage.

Her selected suppliers include Profuma, a specialist with Belgian roots and experience supplying the discerning French market while producing foie gras in Hungary, and artisan producer Zollai, where family members oversee different stages of production.

How to Serve Foie Gras

Foie gras is traditionally served in relatively small portions so that its richness can be balanced with bread, fruit and wine.

  • Serve on lightly toasted brioche, sourdough or warm toast.
  • Pair with fig, plum or fruit chutney, whose gentle sweetness contrasts with the richness of the liver.
  • Serve with fresh or lightly caramelised pear, apple or fig.
  • Pair with a glass of Tokaji sweet wine, particularly Tokaji Aszú, for a classic Hungarian combination.
  • Use smaller portions to create elegant canapés, appetisers or brioche bites for entertaining.

Serving tip: For foie gras packed in a jar, chill it briefly before serving to help the liver release cleanly from the glass. Let it sit at room temperature briefly before eating so its flavour and texture can develop.

Foie Gras Escalopes for Pan-Searing

Foie gras escalopes are portioned slices of raw foie gras designed for quick, high-heat cooking.

They are particularly convenient for pan-searing because each slice can be cooked directly in a hot dry pan for a short time, developing a caramelised exterior while the centre remains rich and soft.

Serve with caramelised apple, poached pear, fig chutney, asparagus or a light jus for a simple fine-dining style starter or main course.

Whole Goose & Duck Foie Gras in Jars
