Premium Quality Caviar

What Is Caviar?

Caviar is salted sturgeon roe, traditionally associated with fine dining and prized for its delicate texture and complex flavour.

Our collection centres on Hungarian Siberian sturgeon caviar, prepared in the traditional Malossol style with a carefully controlled amount of salt to preserve the roe's structure and flavour.

Hungarian Caviar from Danubius Caviar

Our caviar is produced by Danubius Caviar, a Hungarian brand developed by Bajcshal Kft., a long-established fishing cooperative based in Győr.

Bajcshal has worked with freshwater fish for over 65 years and began developing its caviar programme after years of research and international experience. Today, Danubius produces premium caviar from sturgeon raised in Hungary using carefully controlled aquaculture methods.

Selected for Quality, Provenance & Environmental Responsibility

Founder Monika Gyenes selected Danubius Caviar after visiting the producer and learning first-hand about its farming, processing and environmental practices.

The combination of product quality, traceable Hungarian provenance and the producer’s long-term work with sturgeon made it a particularly strong fit for Best of Hungary’s gourmet range.

Sturgeon Repopulation & Environmentally Conscious Production

The producer of Danubius Caviar has been involved in propagating and restocking sturgeon species in Hungarian rivers, working with organisations responsible for sections of the Danube to help return native sturgeon and sterlet to waterways.

The fish used for caviar production are raised in large outdoor pools supplied with fresh spring water. The producer also uses solar energy and modern biological water-purification systems to reduce the environmental impact of fish farming.

CITES Traceability

Sturgeon are internationally protected species, and their trade is regulated under CITES – the Convention on International Trade in Endangered Species.

Our Danubius sturgeon caviar is supplied and labelled in accordance with the applicable CITES requirements, providing an additional layer of traceability from producer to finished tin.

Siberian Sturgeon Caviar

Siberian Sturgeon Caviar comes from Acipenser baerii and is characterised by medium-sized grains, typically around 2.8–3.0 mm, with a glossy appearance and soft, delicate texture.

It is prepared in the Malossol style, using only enough salt to preserve the roe while allowing its natural flavour and individual egg texture to take centre stage.

The result is a creamy, buttery caviar with a clean briny character and a subtle nutty finish.

Preservative-Free & Packed Within 15 Minutes

Danubius Caviar is made without added preservatives, relying instead on careful salting, rapid processing and strict temperature control.

No more than 15 minutes pass between opening the fish and sealing the finished caviar into its container. During processing, the roe is kept between -2°C and -4°C, helping preserve the structure, freshness and delicate texture of the individual grains.

This rapid preparation is an important part of the producer’s quality approach and distinguishes the caviar from products that depend on additional preservatives to extend shelf life.

Great Taste Award-Winning Caviar

Our Siberian sturgeon caviar received 1 Star at the 2025 Great Taste Awards by the Guild of Fine Food.

The judges praised its shiny, well-sized roe, buttery character and individual egg texture, while also specifically recognising the producer’s environmentally conscious approach.

How to Serve Caviar

Serve caviar simply, letting its flavour and texture take centre stage.

  • Serve on blinis with a small amount of crème fraîche.
  • Pair with smoked salmon, cooked quail eggs or scallops.
  • Keep the caviar well chilled by serving the tin or bowl over crushed ice.
  • Use a mother-of-pearl spoon rather than ordinary metal cutlery.
  • Pair with Champagne, sparkling wine or a chilled shot of vodka.

Why Use a Mother-of-Pearl Spoon for Caviar?

Traditional caviar service avoids reactive metal utensils, which can alter the roe's delicate flavour.

A mother-of-pearl spoon is made from a naturally inert material, letting the caviar's clean flavour shine.

Our mother-of-pearl spoons, plates and dishes are handmade in Vietnam from natural shell. They are sourced through Viet Craft and made in Thụy Ứng, near Hanoi, an area with a long heritage of working with natural materials, particularly horn carving. Because each piece is handmade from natural material, slight variations in shape, colour and surface are part of its character.
