Why Heritage Breeds Matter
Traditional livestock breeds developed over generations in particular landscapes and farming systems. Their different growth rates, proportions of fat and lean meat, and suitability for traditional preparation can give their meat a distinctive culinary character.

Mangalitsa – Hungary's Celebrated Heritage Pig
Mangalitsa is one of Hungary's best-known traditional pig breeds, prized by chefs and charcuterie makers for its abundant fat, marbling and rich, succulent meat.
Mangalitsa fat is particularly notable for the breed's characteristically soft, creamy fat, which makes it particularly well suited to salami, lardo, bacon and slowly cured meats.

Hungarian Grey Cattle
The striking Hungarian Grey, or Szürkemarha, is an ancient native cattle breed closely associated with the Great Hungarian Plain.
Szomor Farm raises Grey cattle within the landscape of Kiskunság National Park, where extensive grazing and traditional livestock husbandry remain closely connected with the conservation of the region's distinctive saline grasslands.
The cattle roam and graze outdoors on natural pasture before their meat is transformed into distinctive Grey Cattle Beef Salami. Their fat is also rendered into pure Grey Cattle Beef Tallow, reflecting a traditional approach in which valuable parts of the animal are put to culinary use.
Hungarian Water Buffalo
Water buffalo have also been part of Hungary's rural landscape for centuries. Within Kiskunság National Park, grazing buffalo play an important role in maintaining grassland and wetland habitats.
Szomor Farm's Buffalo Salami offers a particularly unusual expression of this traditional livestock breed, combining buffalo meat with buffalo tallow rather than pork fat.
From the Saline Grasslands of Kiskunság
Szomor Farm was established within Kiskunság National Park on the former floodplain of the Danube, within one of the great saline-steppe landscapes of the Hungarian Plain.
Grey cattle and water buffalo are able to roam and graze extensively across this distinctive environment. This connection between native livestock and protected grassland gives the products a genuine sense of place, as the breeds are part of a living Hungarian agricultural landscape.
A Nose-to-Tail Approach
Traditional food cultures have long valued more than the obvious cuts of meat. Fat has important culinary uses of its own, which is why this heritage-breed collection also includes Mangalitsa lard and Hungarian Grey Cattle beef tallow.
Together with salami, sausage, bacon and lardo, these products reflect a broader nose-to-tail approach in which the distinctive qualities of each breed are valued across a range of foods.

Made by Szomor Farm
Much of this collection comes from Szomor Farm, a family agricultural business working with native Hungarian livestock within Kiskunság National Park.
The farm raises Hungarian Grey cattle, water buffalo and Mangalitsa alongside other traditional breeds, while its own meat-processing operation transforms them into distinctive charcuterie.
This unusually close connection between breed, farm and finished product is one of the reasons Best of Hungary chose to work with Szomor Farm.

Traditional Curing Without Added Nitrates

Grey Cattle Beef Salami and Buffalo Salami also provide completely pork-free expressions of Hungarian heritage-breed charcuterie. The beef salami uses beef tallow rather than pork fat, while the buffalo salami uses buffalo tallow, and both are filled into pork-free casings.

How to Serve Heritage-Breed Charcuterie
Allow salami, lardo and other cured meats to come towards room temperature before serving so that their aroma and texture can fully develop. Pair them simply with good bread, pickles, mustard, cheese and Hungarian wine for a Central European-style charcuterie board.
Mangalitsa lard and Grey Cattle beef tallow are equally at home in the kitchen, where they can be used for roasting, frying and traditional savoury cooking.
