Raw Hungarian acacia honey is a pale golden, naturally runny monofloral honey with delicate floral notes, soft citrus and a clean, lingering sweetness.

What Is Raw Acacia Honey?

Our acacia honey is a single-origin honey made by bees gathering nectar from black locust blossoms (Robinia pseudoacacia), commonly known as acacia. It has a gentle, refined flavour, a light floral aroma and the smooth texture that makes acacia honey one of the most versatile honeys for everyday use.

It is harvested raw, coarsely filtered, and unpasteurised, with nothing added or blended in. Compared with richer wildflower honey, acacia honey is lighter, milder and more delicate, with subtle citrus and vanilla-like notes.

Acacia honey naturally stays runny for longer than many other floral honeys, making it especially easy to drizzle, stir and pour.

How to Use Raw Acacia Honey

Its mild sweetness and naturally pourable texture make raw acacia honey easy to use in both sweet and savoury dishes.

  • Drizzle over warm toast, crumpets, porridge, yoghurt, pancakes or fresh fruit.
  • Stir into tea, coffee, smoothies or salad dressings where you want gentle sweetness.
  • Use in baking, marinades and glazes for pork or roasted vegetables.
  • Use its gentle floral sweetness in our honey and mustard chicken tray bake, where it balances mustard, lemon and smoked paprika beautifully.
  • Use in homemade flapjacks, granola clusters or oat bars for naturally sweet picnic, lunchbox or long-walk snacks.
  • Serve with Brie, Camembert or goat’s cheese on a cheese board, alongside nuts and fresh pear or apple.
  • For honey in its most natural form, try our raw acacia honeycomb, hand-cut straight from the same acacia-honey harvest.

Cook’s Tip

Use acacia honey when you want sweetness to support rather than overpower the other ingredients. Its light flavour is particularly good in delicate dressings, drinks and bakes, while its runny texture makes measuring and mixing effortless.

"Staggeringly fabulous! You can smell the heat of the sun, the flora, the sweetness, the acidity and the hive. The flavour is lemony citrus, a gentle pear drop with floral notes, hints of the hive, and soft, lingering acidity and sweetness. This honey keeps on giving - layer upon layer of nuanced flavour. This is one of the best we've ever tasted. We will dream of this tonight."

Where Does It Come From?

Our raw acacia honey comes from Váraljai’s Honey Farm, a family-run apiary near Ásotthalom on the southern Great Hungarian Plain. Beekeeper László Váraljai keeps his own hives and works with acacia land in this landscape of forests, meadows and open countryside.

Monika visits the farm annually and remains in regular contact with László. She selected his honey for the Monika's Kitchen range for its clean flavour and clear traceability from hive to jar.

Frequently Asked Questions

Is this monofloral acacia honey?

Yes. This is single-origin, monofloral honey made from nectar gathered from black locust, commonly known as acacia. Its pale colour, gentle floral flavour and naturally runny texture are characteristic of acacia honey.

Explore our wider acacia honey collection for more ways to enjoy this distinctive Hungarian honey.

Why does acacia honey stay runny for so long?

Acacia honey naturally has a higher proportion of fructose relative to glucose than many other floral honeys. This means it usually crystallises more slowly and stays beautifully pourable for longer.

Is this honey raw and unpasteurised?

Yes. It is harvested raw, coarsely filtered and unpasteurised. Nothing is added, and the honey is not blended with syrups or other honeys.

Can I give acacia honey to a baby?

No. Like all honey, it is not suitable for children under 12 months of age.

How is this acacia honey tested?

This acacia honey has been independently analysed by QSI. The tested sample complied with the EU Honey Directive requirements and recorded an HMF value of 18.5mg/kg, below the 40mg/kg maximum applicable to honey.

Its fructose-to-glucose ratio was 1.60, consistent with the naturally slow crystallisation and long-lasting runny texture associated with acacia honey. View the independent QSI analysis.
