Raw acacia honeycomb is hand-cut straight from the hive, offering golden honey and naturally chewy, edible beeswax in its purest, most delicious form.

What Is Raw Acacia Honeycomb?

Honeycomb is the natural wax structure bees build to store honey. Each small cell is filled with honey and sealed with a fine layer of beeswax, creating the distinctive hexagonal comb.

Our honeycomb comes from a single-origin acacia-honey harvest. The bees gather nectar from black locust blossoms (Robinia pseudoacacia), commonly known as acacia, giving the honey a delicate floral aroma, soft citrus notes and a clean, lingering sweetness.

Beekeeper László Váraljai carefully harvests fresh honeycomb frames from his own hives and hand-cuts them into individual pieces. It is left raw, unpasteurised and in its natural form, so you can enjoy smooth, runny honey together with soft, delicate beeswax.

How to Use Raw Acacia Honeycomb

Honeycomb is best served simply, allowing its delicate acacia flavour and satisfying texture to shine.

  • Enjoy a small piece straight from the pack as a naturally sweet treat.
  • Spoon over warm toast, crumpets, porridge, yoghurt, pancakes or fresh fruit.
  • Place a piece on a cheese board with Brie, Camembert or goat’s cheese, alongside walnuts and slices of pear or apple.
  • Serve with vanilla ice cream, panna cotta, or cheesecake.
  • Add small pieces to a grazing board with soft cheese, fruit, nuts and crackers.

Serving Tip

Use a clean knife or spoon to cut off a small piece. The soft beeswax is 100% natural and entirely edible, with a gently chewy texture reminiscent of a delicate honey-infused chewing gum. As you chew, it slowly releases the floral acacia honey held within each cell; enjoy it whole, or discard any remaining wax once the honey has dissolved.

Where Does It Come From?

Our raw acacia honeycomb comes from Váraljai’s Honey Farm, a family-run apiary near Ásotthalom on the southern Great Hungarian Plain. Beekeeper László Váraljai keeps his own hives in this landscape of forests, meadows and open countryside.

The comb is cut from László’s own acacia-honey frames. The same carefully harvested honeycomb is also used to produce our raw Hungarian acacia honey, which earned 2 Stars at the 2026 Great Taste Awards from the Guild of Fine Food, giving clear traceability from hive to finished product.

Monika Gyenes visits the farm annually and remains in regular contact with László. She selected his honey for the Monika's Kitchen range for its clean flavour and clear provenance.

How is this acacia honeycomb tested?

This Acacia Honeycomb has been independently analysed by QSI. The tested sample complied with the EU Honey Directive requirements and recorded a moisture content of 16.4%, an HMF value of 3.9mg/kg and diastase activity of 18.6 Schade units.

The HMF result is well below the 40mg/kg maximum applicable to honey, while the diastase result is consistent with fresh, carefully handled honey. Its fructose-to-glucose ratio was 1.52, consistent with the naturally slow crystallisation associated with acacia honey, and sucrose was just 0.1g/100g. View the independent QSI analysis.
