Raw linden honey, also known as lime blossom honey, is a golden honey with a rich floral aroma, refreshing citrus-like notes and a gently herbal finish.

What Is Raw Linden Honey?

Linden honey is made by bees gathering nectar from the fragrant blossoms of the linden tree, commonly called the lime tree. It is one of the most characterful floral honeys, balancing natural sweetness with a distinctive aromatic, lightly herbal freshness.

This single-origin honey is harvested raw, coarsely filtered and unpasteurised, with nothing added or blended in. Its elegant flavour makes it particularly good both on its own and in recipes where a light, bright honey character can shine.

Linden honey may crystallise over time. This is a natural sign of pure honey, and it often develops a soft, buttery texture that is especially lovely for spreading.

How to Use Raw Linden Honey

Its floral, citrus-like character makes linden honey wonderfully versatile in both sweet and savoury cooking.

  • Spread over warm toast, crumpets or fresh bread once crystallised, or drizzle it while runny over porridge, yoghurt and pancakes.
  • Stir into Greek yoghurt with fresh berries, or spoon over fruit salad, vanilla ice cream or panna cotta.
  • Use it in cakes, biscuits and light desserts where you want a gently aromatic honey flavour.
  • Whisk with our black truffle mustard, olive oil and a little lemon juice to make an elegant marinade or glaze for chicken.
  • Try it in our roasted red cabbage wedges, where linden honey brings fragrant sweetness to the balsamic glaze.
  • Serve with goat’s cheese, Brie or a mild blue cheese, alongside walnuts and fresh pear.

Serving Tip

Try linden honey in Greek yoghurt first: the creamy yoghurt softens its herbal edge and lets its floral, citrus-like notes come through beautifully.

Where Does It Come From?

Our raw linden honey comes from Váraljai’s Honey Farm, a family-run apiary near Ásotthalom on the southern Great Hungarian Plain. Beekeeper László Váraljai keeps his own hives and carefully harvests honey from the surrounding landscape.

Monika visits the farm annually and remains in regular contact with László. She selected his honey for the Monika’s Kitchen range for its clear provenance, raw handling and distinctive flavour.

Frequently Asked Questions

Is linden honey the same as lime tree honey?

Yes. Linden honey and lime tree honey are two names for the same variety. In the UK, the tree is commonly called lime; elsewhere it is often called linden.

Is this monofloral linden honey?

Yes. This is single-origin, monofloral honey made predominantly from nectar gathered from linden, or lime tree, blossoms. Discover more floral varieties in our single-flower honey collection.

Why has my linden honey crystallised?

Crystallisation is a natural process in pure honey. Linden honey often becomes soft and buttery when it crystallises, making it easy to spread. To return it to a runnier consistency, stand the jar in gently warm water.

Is this honey raw and unpasteurised?

Yes. It is harvested raw, coarsely filtered and unpasteurised, with nothing added or blended in. Explore our full range by visiting our raw honey collection.

Can I give linden honey to a baby?

No. Like all honey, it is not suitable for children under 12 months of age.
