Our collection focuses on traditional Central European styles chosen for their flavour, versatility, and close connection to the comforting home cooking found across Germany, Hungary, and neighbouring countries.

From the Home of Swabian Spaetzle

Our Spaetzle and Knöpfle are made by ALB-GOLD, a family-owned pasta producer based in Baden-Württemberg on the Swabian Alb in southern Germany, the traditional home region of Spaetzle.

ALB-GOLD has decades of experience producing traditional and modern pasta, with a strong emphasis on quality ingredients, regional food culture and traceable production.

The noodles in this collection are GMO-free and made without artificial additives or preservatives. The Spaetzle is also Certified Kosher.

Spaetzle

Spaetzle are one of southern Germany's best-known regional pasta styles. Their rustic, irregular shape and soft texture make them especially good at carrying butter, gravy and creamy sauces.

They are traditionally served with hearty meat dishes or made into Käsespätzle with melted cheese and crispy fried onions. Alpine-style cheeses such as Emmental or Gruyère work particularly well, while Spaetzle also pair naturally with schnitzel, mushroom sauce and rich stews.

Knöpfle

Knöpfle are a traditional Swabian egg noodle closely related to Spaetzle, but typically shorter and more rounded in shape.

Their soft, substantial texture makes them well suited to cheese dishes, slow-cooked meats and rich sauces. They are also the basis of Käsknöpfle, the traditional cheese-noodle dish associated with Liechtenstein, usually served with melted cheese and caramelised onions.

Kluski Egg Noodles

Kluski egg noodles bring a Polish element to the collection. Their fine shape is similar to German Suppenwalznudeln, or soup pasta, making them particularly well suited to clear broths and lighter home-style dishes.

They are ideal in Rosół, the traditional Polish chicken soup, and can also be served with cottage cheese, caramelised onions or sour cream, or used as a simple side for stews and sauces.
