Käsespätzle is a traditional German dish of cheese spaetzle. This recipe features mature cheddar and grated Gruyère, which adds a nutty, Alpine flavour for an authentic experience. Topped with crispy fried onions, Käsespätzle is a delicious vegetarian comfort food that pairs wonderfully with a refreshing green salad or a side of pickled vegetables.

Käsespätzle - German Cheese Spaetzle

Ingredients

  • 500g spaetzle pasta

  • 2 medium onions

  • 2 tbsp sunflower oil

  • 25g butter

  • 150g mature Cheddar, grated

  • 100g Gruyère, grated

  • Freshly ground black pepper

  • Chopped chives or parsley, to serve

Directions

  1. Bring a large saucepan of well-salted water to a boil. Add the spätzle and cook according to the package instructions, stirring occasionally, until tender. Drain the pasta, reserving a small cup of the cooking water.

  2. While the noodles are cooking, halve the onions and slice them finely. Heat the oil in a wide frying pan over medium heat. Add the onions with a pinch of salt and cook for 12 to 15 minutes, stirring regularly, until deep golden and lightly crispy at the edges. Once done, transfer the onions to a plate.

  3. In the same frying pan, melt the butter over medium heat. Add the drained spätzle and toss them in the butter for two to three minutes, until heated through and starting to brown slightly.

  4. Lower the heat and add both cheeses along with two to three tablespoons of the reserved cooking water. Toss gently until the cheese melts and forms a glossy coating around the noodles. Season generously with black pepper.

  5. Spoon the mixture into warm bowls and scatter the fried onions on top. Finish with a sprinkle of chives or parsley.
