Tokaji Verjus Blanc 750ml
Tokaji Verjus is a bright, alcohol-free juice of unripe white grapes, bringing gentle acidity and fresh fruitiness to food, cocktails and spritzes.
What Is Tokaji Verjus?
Verjus, also called verjuice, means "green juice". It is made by gently pressing grapes before they reach full ripeness. Unlike wine, it is not fermented; unlike vinegar, its acidity is softer, fruitier and less sharp.
This verjus blanc is made from white grapes grown in the historic Tokaj wine region. It has a delicate grape character, herbal aromas and a clean, mouth-watering finish, bringing brightness to dishes where lemon or vinegar might overwhelm more subtle flavours.
How to Use Tokaji Verjus
Keep a bottle close at hand whenever a dish needs freshness, balance or a little extra finesse. Its gentle acidity works especially well with fish, vegetables, salads and rich sauces.
- Whisk with olive oil, mustard, honey and herbs for a fresh vinaigrette that flatters leafy salads, roast vegetables and grain bowls.
- Use in place of lemon over smoked salmon, oysters or grilled fish, where its grape-led acidity adds lift without masking the food's flavour.
- Deglaze a pan after cooking scallops, chicken or pork, then add butter for a glossy, elegant sauce.
- Use in place of a small amount of white wine where a recipe needs freshness and acidity rather than wine flavour or alcohol.
- Stir into marinades for poultry, vegetables or halloumi, or use a small splash to brighten a rich cream, mushroom or butter sauce.
- Add to roasted carrots, beetroot or parsnips shortly before serving for a bright, gently fruity finish.
Cook's Tip: A Wine-Friendly Acidity
Verjus is particularly useful when serving wine with a meal. Its grape-derived acidity feels more harmonious in a vinaigrette or sauce than sharply acidic vinegar or lemon, helping the food complement rather than dominate the wine in the glass. It is a lovely match for dry Tokaji whites and other fresh, aromatic wines.
For a simple fish sauce, reduce a small splash in the pan, whisk in cold butter, then season to taste. Add verjus towards the end of cooking when you want its fresh grape character to remain clear.
Verjus for Cocktails and Alcohol-Free Drinks
Verjus is equally useful behind the bar. Its freshness gives cocktails and long drinks a more rounded, wine-like acidity, while its naturally alcohol-free character makes it a sophisticated foundation for grown-up soft drinks.
- Add a dash to a Gin & Tonic or French 75-style drink for a bright, gently fruity edge.
- Combine it with Chameleon Gin, tonic and ice for an aromatic violet-hued serve with a beautifully fresh finish.
- Make an alcohol-free spritz with verjus, chilled soda water or tonic, ice and a twist of lemon or grapefruit.
- Mix with sparkling water, berries and mint for an easy summer cordial to serve in a jug.
Serving Tip
For an elegant alcohol-free aperitif, pour verjus over plenty of ice and lengthen with chilled sparkling water. Its crisp, tart structure makes a refreshing alternative to sweet cordials or soft drinks at the dinner table.
