Sea Buckthorn Jam 210g
Sea buckthorn jam is a vibrant preserve made with berries from an organic farm, balanced with apple juice for a bright, zesty and naturally tart flavour.
What Is Sea Buckthorn Jam?
This artisan sea buckthorn jam is made with hand-picked berries from Töviskertem's certified organic farm on the Great Hungarian Plain. The fruit is slowly simmered with sugar and apple juice, creating a smooth preserve with a vivid golden-orange colour and distinctive citrus-like tang. Made with 160g of fruit per 100g of finished jam, it has a concentrated fruit character.
Sea buckthorn has a naturally intense tartness. Apple juice and sugar soften that fresh acidity while allowing the berry's gently earthy, slightly herbaceous character to come through. The result is a versatile jam that is equally at home on breakfast toast, alongside cheese or used in savoury cooking.
How to Use Sea Buckthorn Jam
Use this bright, tangy preserve wherever you want to add fruitiness and acidity to sweet or savoury food.
- Spread generously over buttered rye bread, sourdough, toast, crumpets or warm croissants.
- Use as a bright alternative to redcurrant jelly in a cheese toastie, turkey sandwich or cold-meat platter.
- Swirl into Greek yoghurt, porridge, granola or overnight oats, then add fresh fruit and toasted nuts.
- Stir into a vinaigrette for bitter leaves, roasted beetroot, carrots or a grain salad.
- Brush over roast duck, pork ribs or salmon during the final minutes of cooking for a glossy, caramelised glaze.
- Serve with mature Cheddar, blue cheese or goat's cheese and oatcakes for an easy but memorable cheese course.
- Spoon over pancakes, cheesecake, panna cotta, vanilla ice cream or rice pudding.
Cook's Tip
For an easy pan sauce, remove seared duck or pork to rest, then add a tablespoon of sea buckthorn jam directly to the hot pan with a splash of water. Let it melt into the rendered fat and caramelised residue in the pan, stirring briefly until glossy, then spoon over the sliced meat.
For a different way to enjoy the fruit, our sea buckthorn compote contains whole berries in a lightly spiced syrup. It is especially good spooned over pancakes, desserts or cheese, while the smooth jam is easy to spread or stir into sauces and dressings. Discover both in our sea buckthorn collection.
Where Does It Come From?
Our sea buckthorn jam comes from Töviskertem, meaning "Garden of Thorns", a family-run farm near Szolnok on the Great Hungarian Plain. Its orchard lies close to the former floodplains of the Tisza River, a setting well suited to sea buckthorn cultivation.
Horticultural engineer Edit Schultz-Marinka and her family grow their sea buckthorn organically, then make their distinctive fruit products close to the farm. They work with the Askola variety, selected for its clean, naturally sour flavour and gentler bitter finish.
Monika visited Töviskertem and selected the range for its clear provenance and the bright, approachable character of the Askola berries. Discover more about the orchard and this distinctive variety in our guide to Askola sea buckthorn.
