Sea buckthorn compote is a vibrant fruit preserve, made with whole berries from an organic farm and gently spiced with cardamom and star anise.

What Is Sea Buckthorn Compote?

This artisan fruit compote is made with hand-picked sea buckthorn berries from Töviskertem’s certified organic farm. The berries are slowly simmered in small batches with sugar, water, cardamom and star anise, creating whole berries in a lightly spiced syrup with a bright golden-orange colour and a wonderfully distinctive flavour.

Sea buckthorn has a naturally lively, citrus-like tang. Here, that freshness is balanced by unrefined cane sugar and gently warming spices, resulting in a compote that is fruity and fragrant.

The Askola variety is chosen for its clean sourness without the bitter aftertaste sometimes associated with sea buckthorn.

How to Use Sea Buckthorn Compote

Serve it wherever you would use a fruit preserve, or use its bright acidity to cut through richer savoury dishes.

  • Spoon over pancakes, crumpets, porridge, Greek yoghurt, granola or overnight oats.
  • Serve with panna cotta, cheesecake, vanilla ice cream or rice pudding for an easy but elegant dessert.
  • Pair with roast duck, pork ribs, venison or salmon; the fruit’s tangy character works particularly well with rich meats and oily fish.
  • Warm gently with a splash of water, then brush over duck, pork or salmon during the final minutes of cooking for a glossy, lightly spiced glaze.
  • Add a spoonful to a cheese board with goat’s cheese, Brie or a mature hard cheese, alongside walnuts and crisp crackers.

Cook’s Tip

For a quick savoury sauce, stir a tablespoon of compote into the resting juices of roast duck or pork with a small splash of water. Its sweetness, acidity and gentle spice make an instant, characterful accompaniment.

For a different way to enjoy the fruit, our sea buckthorn jam has a smooth, spreadable texture that is particularly useful on toast or stirred into sauces and dressings. The compote's whole berries and lightly spiced syrup make it especially attractive spooned over pancakes, desserts or cheese. Discover both in our sea buckthorn collection.

Where Does It Come From?

Our sea buckthorn compote is made by Töviskertem, meaning “Garden of Thorns”, a family-run farm near Szolnok on the Great Hungarian Plain. Its four-hectare orchard sits near the former floodplains of the Tisza River, a landscape well suited to sea buckthorn cultivation.

Horticultural engineer Edit Schultz-Marinka and her family grow the berries organically, then develop and prepare their distinctive sea buckthorn products in controlled conditions close to the farm.

Töviskertem’s range is built around the Askola variety, selected for its clear, naturally tart flavour and lack of bitter finish.
