What is a Sachertorte?
This iconic dessert is Austria's best known culinary export and has captivated dessert lovers for nearly two centuries. The original Sachertorte was created in 1832 by apprentice pâtissier Franz Sacher, who was asked to develop a special dessert for Prince Metternich and his distinguished guests. Today, the Austrian Sacher Torte remains one of the most famous European cakes.
The Sacher cake is deceptively simple yet extraordinarily refined. A thin layer of apricot jam adds a subtle fruity brightness that beautifully balances the rich chocolate, while a mirror-smooth dark chocolate glaze provides an elegant finish. Traditionally, it is served with a generous dollop of unsweetened whipped cream, which Viennese custom dictates must accompany every slice.

How is it made?
Creating an authentic Sacher Torte requires precision and patience. The cake begins with a batter made from flour, butter, sugar, egg yolks, and stiffly beaten egg whites, which are folded in to create its characteristic texture.
After baking and cooling, the cake is split horizontally and brushed with warmed apricot jam. The layers are then reassembled, and the entire cake is coated with perfectly tempered dark chocolate icing, resulting in a signature glossy finish.
