Linzer cookies are tender, windowed shortbread biscuits filled with bright apricot jam and finished with a crunchy walnut topping, perfect with coffee.

What Are Linzer Cookies?

Named after the Austrian city of Linz, Linzer cookies are the petite biscuit cousin of the celebrated Linzer Torte. Each one has a lightly crisp, tender pastry base, a bright layer of apricot jam and a distinctive cut-out top that reveals the fruit filling beneath.

Known in Austria as Linzer Augen, or "Linzer Eyes", they are a classic part of the country's festive baking tradition. Their handsome windowed shape, gently sweet apricot filling and walnut finish make them a lovely addition to any selection of Austrian cakes.

How to Serve Linzer Cookies

Each pack contains two Linzer cookies: just right for sharing over coffee, serving after dinner or adding a little refinement to an afternoon treat.

  • Serve with espresso, black coffee or fragrant Earl Grey tea for an easy coffeehouse-style break.
  • Offer on an afternoon-tea stand with fresh berries, whipped cream and other small pastries.
  • Plate with vanilla ice cream or softly whipped cream for a simple but elegant dessert.
  • Add to a festive biscuit plate, weekend brunch spread or after-dinner coffee tray.
  • Give as a small gift for anyone who enjoys traditional continental baking.

Serving Tip

Serve at room temperature, when the pastry is at its most tender, and the apricot jam is at its most fragrant and flavourful. A small sharp knife will give a neat cut if you would like to share one.

How Are Linzer Cookies Made?

The dough is rolled and cut into crinkle-edged circles. One biscuit in each pair gets its characteristic central window, then bakes until lightly golden and delicately crisp.

Once cooled, the biscuits are joined with fragrant apricot jam and finished with coarsely chopped walnuts. The result is a beautifully balanced contrast of tender pastry, fruity filling and gentle nutty crunch.

The same marriage of Linzer-style pastry and apricot jam helped inspire our Ischler cookies, while the dark-chocolate finish recalls a Sachertorte.

Where Do They Come From?

Our Linzer cookies are hand-made by Nándori Cukrászda, a family-run Budapest patisserie on Ráday Street. Its story began in 1957, and László Nándori took over the business in 1988, continuing its tradition of carefully prepared cakes and pastries.

Skilled confectioners prepare each cookie by hand, giving the apricot filling, walnut topping and neatly cut-out pastry the attention that this classic deserves.

Frequently Asked Questions

What are Linzer Augen?

Linzer Augen, meaning "Linzer Eyes", is the Austrian name often used for Linzer cookies with a small cut-out window in the top biscuit. The opening reveals the jam filling and gives the cookie its familiar appearance.

What do Linzer cookies taste like?

They have a tender, lightly crisp pastry, a bright fruity layer of apricot jam and a gentle walnut crunch. The flavour is delicately sweet and pairs especially well with coffee or tea.

How many Linzer cookies are in a pack?

Each pack contains two Linzer cookies, making it ideal for sharing or enjoying over two coffee breaks.

Are Linzer cookies the same as Linzer Torte?

They are closely related. Linzer cookies take the almond-or-nut pastry and fruit-filling idea of the larger Linzer Torte and turn it into a smaller, easy-to-serve sandwich biscuit with its characteristic windowed top.

Can I serve Linzer cookies as dessert?

Yes. They are delicious on their own after dinner, or served with vanilla ice cream, softly whipped cream or fresh raspberries for a more elaborate finish.
