Truffle Pasta 250g
Black truffle pappardelle with free-range eggs and real dried summer truffle is a richly flavoured ribbon pasta for creamy sauces and elegant meals at home.
What Is Black Truffle Pappardelle?
Black truffle pappardelle is a broad ribbon pasta made with free-range eggs, wheat flour and black summer truffle. It follows the rich Hungarian tradition of 8-egg pasta, using fresh eggs without added water for a golden colour, satisfying bite and full egg-pasta flavour.
The dried black truffle is worked into the dough, giving the pasta a gentle, earthy and savoury character before you add a sauce. This makes it an easy way to bring a subtle truffle note to a meal without needing fresh truffle on hand.
The wide ribbons hold buttery dressings, cream sauces and mushroom sauces particularly well, while the truffle gives even simple preparations a more aromatic finish. This is premium dried egg pappardelle, dried in stages for a dependable bite and a useful cupboard life.
How to Enjoy Black Truffle Pappardelle
This egg-rich ribbon pasta works beautifully with simple sauces that let its gentle truffle flavour come through. Toss it with butter, Parmesan and a little pasta water for an easy supper, or pair it with cream, sautéed mushrooms or roast chicken.
For a deeper finish, add a few drops of black truffle oil just before serving. For an easy creamy mushroom sauce, loosen a spoonful of black truffle pesto with cream and a little pasta water. Crisp pieces of Mangalitsa bacon pair especially well with the rich egg pasta.
A Simple Serving Idea
Cook the pappardelle until just al dente, then toss it in a pan with sautéed mushrooms, a splash of cream and a little pasta water. Finish with Parmesan, freshly ground black pepper and a few drops of black truffle oil.

How to Cook Black Truffle Pappardelle
- Bring a large pan of salted water to the boil.
- Add the pasta and cook for 4–8 minutes, until al dente. Start tasting towards the lower end of the cooking time.
- Reserve a little cooking water before draining.
- Toss with your chosen sauce and serve immediately.
Do not rinse the pasta after cooking. Its lightly starchy surface helps butter, cream and cheese cling smoothly to the broad ribbons. Instead, toss it straight into the sauce with a splash of the reserved cooking water.
Where Does It Come From?
Our black truffle pappardelle is made by Ildikó Heppenheimer and her family in Márok, a small village in Baranya, southern Hungary. Their family farm produces free-range eggs and dried pasta, bringing these two traditions together in small rural workshops.
The family’s free-range hens are fed a GMO-free, soy-free cereal-based diet. Ildikó uses their small fresh eggs for the pasta, chosen for their naturally higher yolk-to-white ratio, which gives the dough its rich colour, flavour and satisfying texture.
The black summer truffles worked into the pasta are Jászsági nyári szarvasgomba, or Jászság summer truffles, from Hungary’s Jászság region. This regional speciality holds EU Protected Geographical Indication (PGI) status, recognising the connection between its origin, reputation and distinctive character.
A team of truffle hunters led by István Bagi supplies the truffles, drawing on his extensive knowledge of Hungary’s truffle-growing landscapes and seasonal conditions. Trained dogs locate the truffles by scent beneath the soil; the hunting teams include rescue dogs trained by a specialist animal charity.
Monika visited Ildikó’s farm, where their shared enthusiasm for carefully made food grew into a close friendship. She selected the Heppenheimer family’s porcini and truffle pastas for the Monika’s Kitchen range for their free-range eggs, small-batch craftsmanship and generous flavour.
