Mákos bejgli is a traditional Hungarian poppy seed roll. This delightful cake features a rich filling made from ground poppy seeds and sweet spices.

The poppy seed (mákos) and walnut (diós) bejgli are typically eaten on New Year's Day, as consuming poppy seeds is thought to bring good luck and prosperity, while walnuts are believed to ward off evil.

How is it made?

To prepare mákos bejgli, a dough is rolled out and generously spread with a sweet mixture of freshly ground poppy seeds and a variety of dried fruits. The filled pastry is then tightly rolled into a cylinder and brushed with egg yolk, giving it a characteristic marbled, golden crust. It is baked until it becomes deliciously soft and tender on the inside.
