Ash cheese is an artisan cow's cheese with a striking ash line running through its centre. Traditionally aged, it offers a creamy, complex flavour profile.

What is it?

This premium-quality grass-fed cheese is made from pasteurised cow's milk sourced from local, pasture-raised cattle. A semi-hard cheese, it is aged for 4 months, resulting in a mellow, layered taste that ranges from mild and buttery near the rind to more pronounced, earthy notes around the ash line.

The signature ash line not only enhances its visual appeal but also has a fascinating backstory rooted in 16th-century cheesemaking tradition.

Similar to the French Morbier, this ash-aged cheese originated out of necessity. Legend has it that a cheesemaker, lacking enough milk to make a full-sized cheese, layered the milk curds from the evening, covered them with ash, and added fresh morning curds, resulting in this visually striking wheel.

How can I use it?

  • The dramatic charcoal-grey ash vein makes an impressive presentation on any cheeseboard, serving as both a conversation starter and an Instagram-worthy centrepiece. It pairs wonderfully with a selection of continental meats for an antipasti platter.
