Easy roasted new potatoes recipe best made with fresh spuds from Jersey or Pembrokeshire. This versatile side is crispy on the outside and fluffy inside.

Roasted New Potatoes

Ingredients

  • 800g Jersey or Pembrokeshire new potatoes
  • verjus

  • 1 tablespoon kosher salt
  • 2 tablespoons unsalted butter
  • freshly ground black pepper

  • fresh rosemary
  • smoked paprika

Directions

  1. Combine the potatoes with half a cup of white wine vinegar and one tablespoon of kosher salt in a medium saucepan, then add water until the potatoes are fully covered.

  2. Bring to a boil, then reduce the heat and simmer until potatoes are tender. Drain the water and pat the potatoes dry.

  3. Heat butter in a large skillet over medium-high heat. Add the potatoes and season them with kosher salt and pepper. Cook until golden brown and crisp while tossing occasionally.

  4. Drizzle with three tablespoons of white wine vinegar, then serve topped with fresh rosemary and a sprinkling of smoked paprika.
