Ham and melon salad recipe, the rich marbling of Mangalitza is superior to Parma ham, and its salty umami flavour pairs perfectly with juicy melon slices. Serve this gourmet starter with Mozzarella balls and a balsamic dressing, on a bed of fresh peppery rocket.
The tender texture and unique marbling of mangalitza, known as the wagyu of the pork world, provides a complex, more intense experience than regular Parma ham.
Ingredients

150g mangalitza ham

1 ripe melon

100g rocket

50g mini mozzarella balls

balsamic vinegar
Directions
Cut the melon in half. Remove the pips using a small spoon.
Slice the melon into thicker wedges, then remove the skin and cube.
Cut the mangalitza ham slices into thin strips.
Place the melon cubes, mangalitza ham, rocket, and mozzarella balls into a large salad bowl. Drizzle with balsamic vinegar and gently toss to combine.
