Zöldbableves is a traditional Hungarian green bean soup that you can easily cook using fresh or frozen string beans. It is a healthy vegetable option. You can also turn it into a filling one-pot meal by adding some csipetke soup noodles.

Ingredients
- 300g green beans
- 3 small carrots
- 3 medium potatoes
- 3 tomatoes
- 2 celery sticks
- 1 red pepper
- 1 onion

1 tbsp Piros Arany
- 3 tbsp tomato puree
- 2 tbsp roux

1/2 lemon juice
- 1/2 tbsp dried lovage

sunflower oil

salt & pepper to taste

vegetable stock

fresh bunch of parsley

csipetke pasta (optional)
Directions
Chop the vegetables to your preferred shapes and sizes.
Heat the oil in a 5l pan, then fry the onions until translucent. Add the diced red pepper, carrots, and celery, then season with salt and pepper. Let it cook for 5 mins, stirring occasionally.
- Stir in the Piros Arany and tomato juice, then add the beans and potatoes.
- Pour in the vegetable stock until everything is well covered, and let it cook until the vegetables reach your preferred consistency.
- Stir in the roux and lemon juice at the end, then sprinkle with the roughly chopped parsley and dried lovage.
