Organic hulled proso millet is a golden yellow ancient grain. This is a healthy and versatile gluten-free ingredient with a mild natural sweetness.

How should I use it?

You can turn millet grains into an easy-to-cook gluten-free side dish similar to couscous with a fluffy texture and deliciously nutty flavour from the gentle toasting, or use it as a nutritious substitute for potatoes, quinoa, or white rice. Suitable for a wide range of sweet or savoury recipes, you can add the cooked millet to salads for a healthy source of energy, or use it to thicken soups, stews, or casseroles. Ground into a fine powder, millet flour is excellent for baking bread, muffins and cookies, or for making a warming breakfast porridge.

How should I cook it?

Rinse the millet in cold water. Toast the raw millet over medium heat in a saucepan stirring continuously until the grains turn lightly golden (be careful not to let them burn). Place it in a saucepan with three times as much water as millet, then bring to a boil, cover, and simmer gently for 15-20 minutes until tender and fluffy.
