Csülök is a bone-in ham hock from the finest cuts of pork shank, traditionally cured and oak-smoked for a rich meaty texture with an intense smoky aroma.
Csülök is delicious on its own or serve with horseradish and hard-boiled eggs for an authentic Hungarian experience. You can also add it to soups and stews for an infusion of smoky flavour.
Cooking recommendation:
Before cooking, let the ham hock soak overnight.
Place in cold water, bring to a boil and cook for 15-20 minutes. Drain and replace the cooking water, then add one peeled brown onion, 2-3 dried bay leaves and 5-6 black peppercorns, and let it simmer on low heat until the meat is soft and tender. Let it cool down inside the saucepan. Afterwards, you can also use this water to prepare some delicious hard-boiled eggs.
