Mézeskalács - Gingerbread Biscuits

Mézeskalács recipe for Hungarian gingerbread biscuits to get you into a festive mood, the crunchy cookies bring the warming flavour of sweet winter spices.
This simple recipe makes a delicious base to let your imagination run free. Use cookie cutters to create a selection of shapes and decorate them with icing sugar for striking gingerbread houses and smiling gingerbread men.
Ingredients

500g flour

250g honey

120g butter

100g sugar

3tsp baking powder

gingerbread spice mix - either pre-made or a combination of ground ginger, cinnamon, cloves and nutmeg
Directions
In a large bowl, combine the dry ingredients.
Melt the butter, add it to the honey and then combine thoroughly with dry ingredients.
Cover the bowl and let it rest overnight in the fridge.
Briefly knead the dough together again, then roll it out until it's about 5mm (¼”) thick. Use cookie cutters to stamp different shapes out of the dough.
Place the shapes on a tray lined with parchment paper and bake in an oven preheated to 180 Celsius for about 10-15 minutes until they become lightly golden brown.
Remove from the oven and let the cookies cool down before decorating them with icing sugar.
