These simple and delicious pumpkin muffins make for a scrumptious guilt-free treat that is high in protein and without any added sugar. A filling snack, it is bursting with toasted nutty aromas and the warming flavour of sweet winter spices.

Ingredients
- 3 eggs
- 6 tbsp almond flour

3 tbsp pumpkin seed flour

3 tbsp honey
- 1/2 cup almond milk

1/2 tbsp pumpkin seed oil
- 1 tbsp baking powder
- sprinkle of salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- handful of fresh pumpkin seeds
Directions
Preheat the oven to 190°C.
Combine the eggs with the acacia honey and the almond milk, then mix in the rest of the ingredients one at a time, ensuring that the resulting mixture is well blended.
Place in a greased muffin mold (or cases) filling half-full.
Bake for 15-20 minutes.
Sereve sprinkled with fresh pumpkin seeds for some added crunch.

These are really good. I substituted hazelnut flour for the almond flour and used semi-skimmed milk instead of the almond milk. They make a lovely high-protein, low-fat snack.
