A recipe for healthy gluten-free pumpkin muffins, this is a delicious high-protein cupcake bursting with nutty aromas & the warming flavour of sweet spices.
Ingredients
- 3 eggs
- 6 tbsp almond flour

3 tbsp pumpkin seed flour

3 tbsp honey
- 1/2 cup almond milk

1/2 tbsp pumpkin seed oil
- 1 tbsp baking powder
- sprinkle of salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- handful of fresh pumpkin seeds
Directions
Preheat the oven to 190°C.
Combine the eggs with the acacia honey and the almond milk, then mix the ingredients one at a time, ensuring the resulting mixture is well blended.
Place in a greased muffin mould (or cases), filling half-full.
Bake for 15-20 minutes.
Serve sprinkled with fresh pumpkin seeds for some added crunch.
