Linzer – Apricot Torte Biscuit

Linzer is a traditional recipe popular in Germany and Austria. The delicious shortcrust pastry is filled with moreish apricot and strawberry jam filling.
Ingredients

300g flour

200g butter

1 egg yolk

1 egg

100g sugar

half a lemon peel

apricot jam

strawberry jam
Directions
Add the butter to the flour in a bowl and combine by hand.
Pour in the egg yolk, sugar and grated lemon peel and knead. Shape the dough into a ball, cover the bowl in kitchen foil and put it in the fridge for at least 1 hour.
Roll out the dough on a floured surface and cut it into shapes with a pair of Linzer cookie cutters. If you don't have one at home, you can use any cookie cutter and just cut out the middle from half of the shapes.
Place the biscuits onto a tray lined with baking paper and brush the holes in the centre with a beaten egg.
Bake the Linzer rings in an oven preheated to 170 degrees for 20-25 minutes until they turn golden brown.
Remove from the oven, layer apricot or strawberry jam on the whole shapes, and carefully place the shapes with the hole on top, ensuring the jam doesn't overflow down the sides. Serve with a dusting of icing sugar.
