Healthy Pumpkin Muffins

These simple and delicious pumpkin muffins make for a scrumptious guilt-free treat that is high in protein and without any added sugar. This filling snack is bursting with toasted nutty aromas and the warming flavour of sweet winter spices.

  • 3 eggs
  • 6 tbsp almond flour
  • 3 tbsp pumpkin seed flour
  • 3 tbsp acacia honey
  • 1/2 cup almond milk
  • 1/2 tbsp pumpkin seed oil
  • 1 tbsp baking powder
  • sprinkle of salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • handful of fresh pumpkin seeds



  1. Preheat the oven to 190°C
  2. Combine the eggs with the acacia honey and the almond milk, then mix in the rest of the ingredients one at a time, ensuring that the resulting mixture is well blended
  3. Place in a greased muffin mold (or cases) filling half-full
  4. Bake for 15-20 minutes
  5. Sprinkle with fresh pumpkin seeds for an added crunch
