Csigatészta is a traditional Hungarian pasta that is equivalent to the Italian Garganelli. It is made from fresh, free-range eggs and premium wheat flour.

What is it?

Csigatészta, also known as lúdgége, is essential for classic recipes like chicken soup. Communities across the Hungarian Great Plain commonly prepare it to celebrate special occasions, such as weddings and Christmas. This short egg pasta is characterized by its unique shape, achieved through hand-rolling, with distinctive ridges added using a thin dowel.

Interestingly, a similar tubular shape was developed in the Emilia-Romagna region of Italy, where it is created by rolling flat pasta over a ridged wooden board, resulting in the beloved garganelli noodle.

The csigatészta is made with free-range eggs from chickens that enjoy a natural, GMO-free, soy-free, and 100% cereal-based diet. The pasta dough is prepared using small eggs laid by young hens, which have a higher yolk-to-white ratio, giving the pasta a richer flavour.

How can I use it?

The hollow interior and ridged exterior of csigatészta provide an ideal combination for holding flavourful soups or rich sauces. This versatility makes garganelli suitable for a wide variety of authentic dishes, including a delicious Bolognese or an indulgent mushroom ragù.

How should I cook it?

Cook in boiling water for 3-5 minutes. Strain and it is ready to be added to soup, or serve with a sauce and grated Parmesan.
