Baracskai ash cheese is a unique artisan cow's cheese with a striking ash line in the middle. It is traditionally aged for a creamy and complex flavour.

What is it?

Baracskai is a distinctive Hungarian artisan cheese made from pasteurized cow's milk sourced from local, pasture-raised cattle.

It is aged for four months, resulting in a mellow and layered taste that ranges from mild and buttery near the rind to more pronounced, earthy notes around the ash line.

With its signature ash line running through the centre, this premium-quality semi-hard cheese not only delivers exceptional taste but also boasts a fascinating backstory rooted in 16th-century cheesemaking tradition.

Similar to the French Morbier, this ash-aged cheese was born out of necessity. Legend has it that the cheesemaker did not have enough milk to create a full-sized cheese. To solve this, he layered the evening's milk curds, covered them with ash, and added the morning's fresh curds, resulting in a two-toned wheel that is visually striking.
