Madártej recipe for making a Hungarian floating island dessert. This delicious pudding is a sweet treat of velvety meringues in creamy vanilla custard.
Ingredients

800ml milk

4 egg whites

4 egg yolks

70g caster sugar

2 tbsp icing sugar

1 vanilla pod

Directions
Use a hand mixer to whip the egg whites with a pinch of salt and two tablespoons of icing sugar until stiff.
Cut open and scrape the vanilla pod's contents into the milk. Heat the milk in a saucepan, and once it is boiling, use a spoon to form 'floating islands' from the egg foam and add them to the simmering milk. Cook for 2-3 minutes, then turn the egg meringues carefully and continue cooking for another 2-3 minutes. Remove the meringues to an empty dish.
Mix the egg yolks with a pinch of salt and the caster sugar until airy, then add a little lukewarm milk and mix until smooth. Add the rest of the milk previously used, stir and pour it all back into the pot.
Cook over low heat, stirring constantly, until the sauce thickens nicely, then let it cool. Add the meringues and refrigerate for at least 2-3 hours before serving.
