Golden Chanterelle (cantharellus cibarius sl.) is a forest mushroom, growing between May and August. It has a fruity aroma with notes of apricot and peach. There is no need for heat treatment, but it does react well to it. When cooked, golden chanterelle's texture becomes velvety, with a more wooden, earthy flavour and a hint of black pepper.
Rinse thoroughly and soak in warm water for 4 hours. Afterwards, golden chanterelle becomes a versatile ingredient, pairing especially well with strong flavoured fruits and vegetables. You can use it to make a delicious soup or stew, or alternatively use it to give a quiche or pastry a culinary twist. You can also cook a quick and flavourful pasta or risotto.
