A pretty, clear oeil de perdrix shade and honeyed, with raspberry notes on the nose. Delightful on the palate, with soft acidity and pleasing complexity. This would be great as a shrub, as well as good for finishing sauces and even in a dressing. Extraordinary length here, too, with all the noted elements persisting. Really clever.
A beautifully crystal-clear vinegar, almost blushed apple in colour. The aroma is full of apples and berries - clearly fruity and fresh inviting us in to taste. The apple, berries, acetic and sweet layers of flavour are perfectly balanced. Clean and fresh on the palate. Wonderfully fragrant and would add layers to any dish or drink - so versatile.
