I use a very light water and vinegar based dressing from my late mother-in-law – particularly wonderful for a light cucumber salad which is perfect with goose, pork etc as it cuts through the richness. Mix 1 measure vinegar – Tokay is fab 2 measures water Salt, pepper, masses of garlic, fresh dill, dried red pepper flakes, Dijon mustard. Mix all together and check seasoning Then add thinly sliced salted and squeezed cucumber and put in a shallow bowl with dollops of sour cream with dash of paprika on the top
